With a deep umami, savory richness, this easy tofu recipe brings that restaurant-quality taste to homemade meals.

Now, I want to clarify this is not a traditional Thai red curry recipe. 

It is inspired by the flavors of the red curry tofu at my favorite Thai restaurant, but those flavors are fused with our Tofu Freezer Trick method to create the meatiest tofu cutlet that tastes like and has the mouthfeel of curried chicken!

If you don’t already know, our Tofu Freezer Trick is a method thousands of people have used to revolutionize the texture of their tofu, and this curry version lives up to the hype. 

Anyone you serve this to will be shocked it’s tofu, and it might just change a few minds about tofu being tasteless!

Red Curry Tofu Recipe Ingredients

This easy tofu recipe only requires 5 ingredients commonly found in any vegan kitchen.

Extra firm tofu – Frozen and thawed according to our Tofu Freezer Trick

Olive oil – Use a quality olive oil for the best flavor.

Vegan chicken bouillon powder – You can use store bought or make a batch of our Easy 7-Ingredient Vegan Chicken Bouillon

Red curry paste – Be sure to check the ingredients as some curry pastes contain fish sauce or shrimp paste.

Yellow curry powder – Make sure it’s fresh so it’s at its most flavorful.

Substitutions & Alterations

For the tofu: You might be able to use non-soy tofu like chickpea tofu, but we have not tried them with the tofu freezer trick.

For the curry paste: Feel free to vary the kind of curry paste you use – green curry paste and yellow curry paste will add different flavors, so have fun experimenting

For the bouillon powder: Bouillon paste can be used instead of bouillon powder, but I would cut the amount in half

Coconut Curry Tofu Variation: This recipe makes a red curry tofu without coconut milk, but you can add 2-3 Tbsp of coconut milk with the marinade ingredients for a coconut curry tofu marinade. I recommend using unsweetened coconut milk.

Oil-Free Note: If you want to make these cutlets oil-free, you could sub water for the olive oil, but remember this will add liquid to the tofu and affect the overall texture. This could be remedied by adjusting the baking time, but keep that in mind!

How to Make Curried Tofu

This is a very abbreviated version of the complete instructions found in the recipe card at the bottom of this post. 

Step 1: Prep the tofu

  1. First, freeze and defrost your tofu, leaving the package unopened.
  2. When the tofu is thawed, squeeze it gently over the sink and press it with a tofu press or over paper towels to remove any excess liquid.
  3. Place your tofu on a cutting board and slice it into 8 equal “cutlets”.

Step 2: Marinate the tofu

  1. Mix all the ingredients for the red curry tofu marinade.
  2. Pour the curry tofu marinade over your tofu cutlets, making sure each cutlet is coated.
  3. Place the marinated cutlets in your fridge for at least 30 minutes or overnight. You can also re-freeze the tofu in the marinade and defrost when you’re ready to cook and eat!

Step 3: Bake the tofu

  1. Preheat your oven to 350F and line a large baking sheet with tin foil. 
  2. Place the cutlets on the prepared baking sheet, not touching.
  3. For extra flavor, you can brush the tofu cutlets with more marinade before baking and after flipping.
  4. Bake at 350F for 60-75 minutes, flipping them halfway through.

Tips & Tricks for the Best Red Curry Tofu Cutlets

  • Follow our Freezer Tofu Method to achieve the meatiest texture to your tofu. 
  • Let the tofu marinate for at least 30 minutes in the fridge so the flavors really develop. Overnight is ideal.
  • Reserve some of the marinade so you can brush the tofu again before baking it.
  • If your marinade is too thick to brush onto the cutlets, add 1 Tbsp water and mix it around. Be careful not to add too much water though or it will affect the texture.
  • Use a tofu press or heavy cutting board and some paper towels to remove excess water from the tofu before marinating.
  • If you love this tofu cooking method, always keep a block of tofu in the freezer so it’s halfway ready when you need it!

How to Serve Curried Tofu

Serve this vegan curry tofu over basmati, white, or brown rice. It’s also a great addition to any Thai dish like vegan Pad Thai, Khao Pad, or some simple spring rolls.

We’ve enjoyed them as a side with roasted seasoned potatoes and mashed potatoes, on top of a big salad with tahini sauce, or stuffed into a variety of sandwiches.

Curry tofu is also great alongside any vegetable curry dish or traditional Indian dishes like curried potatoes and chickpeas (chana aloo) or potatoes and cauliflower (aloo gobhi).

How to Store Vegan Curry Tofu

You can store these cutlets in an air-tight container in the fridge for up to 7 days. 

You can also freeze them – before or after cooking – for up to 8 weeks! Just be sure cooked cutlets are completely cool before storing.

How to Reheat

Reheat cutlets in the microwave on high for 1 minute or until heated through. 

I usually find the microwave does just fine, but if the tofu could use some extra crispiness, feel free to reheat in the air fryer or oven.

But honestly, they’re also really good cold straight from the fridge!

What does red curry taste like?

Red curry is known for its bold and spicy flavor. It is usually comprised of several varieties of red chiles, coriander, cumin, lemongrass, and ginger to name a few.

How long should you marinate tofu?

You should marinate tofu for at least 30 minutes after it has been thawed and pressed. Overnight is ideal for maximum flavor. You can also re-freeze the tofu in the marinade and defrost when you’re ready to cook and eat!

Do I need to soak tofu before cooking?

No, you do not need to soak tofu before cooking. I mean, people do it, but I don’t recommend it. Just follow the tofu freezer trick for the best, meatiest results

How do you thaw frozen tofu?

To thaw frozen tofu, leave the frozen tofu in the package and place in the fridge. A slow defrost is best and will allow for the greatest texture transformation. If you have the time, I would transfer the tofu to the fridge to fully defrost over 24-48 hours. 

If you want it to defrost in 1 day, you can transfer it to a dish and set it on your counter. This way, the tofu should defrost in 12-24 hours. Once defrosted, move the tofu immediately to your fridge until you’re ready to cook with it.

How do you defrost frozen tofu quickly?

If you forgot to take the tofu from the freezer and you don’t have 12-24 hours (been there), put the unopened container in a large container of tepid water. Done this way, the tofu should defrost in about 5-7 hours.

Ingredients

  • 16 oz block extra firm tofu

For the red curry tofu marinade:

Step 1: Prep the tofu

  • First, freeze and defrost your tofu. Place the whole container (do not open it) in the freezer overnight. In the morning, remove it from the freezer and set it in a shallow dish on your counter to thaw. This will take several hours.
  • When the tofu is thawed, squeeze it gently over the sink and press it with a tofu press or on paper towels to remove any excess liquid.
  • Place your tofu on a cutting board and slice it into 8 equal “cutlets”. I do this by slicing it in half, then slicing those halves in half, then cutting each of those slices in half.

Step 2: Marinate the tofu.

  • Mix all the ingredients for the marinade.
  • Pour the marinade over your tofu cutlets, making sure they are all nice and coated.
  • Place them in your fridge for at least 30 minutes or overnight.

Step 3: Bake the tofu

  • When you’re ready to bake your cutlets, preheat your oven to 350F and line a large baking sheet with tin foil.
  • Place the cutlets on this baking sheet, about an inch or so apart.
  • For extra flavor, you can brush the tofu cutlets with more marinade before baking. If the marinade has become too thick, feel free to add a drop or two of water to loosen it up.
  • Bake at 350F for 60-75 minutes, flipping them halfway through.

Step 4: Serve and store

  • Serve this red curry tofu over rice or potatoes, on a salad, or alongside any vegetable curry.
  • You can store them in an air-tight container in the fridge or freeze them for up to 8 weeks!

What these doubters don’t realize is we have a few time-tested tricks up our sleeves to turn tofu into the type of meaty magic that will stop those doubts right in their tracks. And in this post, we are going to teach you how to do it too!

We took these vegan Lemon Pepper Wings (and many other flavors of tofu wings) to a Super Bowl party last year, and all the non-vegan guests couldn’t stop eating them. 

One person even said, “Wow, when you said tofu I wasn’t expecting it to taste so much like chicken.” We don’t mess around here at PPC!

What Are Lemon Pepper Wet Wings?

Lemon Pepper Wings started as a variation of the popular Buffalo wings. It is said that they were invented in Atlanta, GA in the early 2000s where the local residents would sprinkle lemon pepper seasoning on their wings to cut the spicy heat of the Buffalo sauce a little.


The addition of the seasoning became so popular it found its way to being its own wing flavor, and the Lemon Pepper Wet Wing was born. Since its Atlantan inception, the flavor has grown in popularity across the south.

Lemon Pepper Wings went globally viral and became tremendously popular when a character in the TV show Atlanta received an order of Lemon Pepper Wings from real-life restaurant J.R. Crickets, a local Atlanta establishment known for its wings .

Lemon Pepper Tofu Wing Ingredients

Here’s what you’ll need to make the best vegan lemon pepper wet wings in town!

For the Wings and Marinade:

Extra firm tofu – Frozen and thawed.  Make sure you get the kind that comes in water, not vacuum sealed. This is important for the texture when using the Tofu Freezer Trick.

Olive oil – I like to use an oil marinade rather than a water-based one because it doesn’t add more water to the tofu (which can negatively affect the texture when cooked). It also helps by adding fat and creating that “fried” effect without actually frying them.

Vegan chicken bouillon powder – We use our easy homemade bouillon powder which adds that perfect touch of chickeny flavor!

For the Breading:

Vegan seasoned bread crumbs –  Be sure to check the ingredients, as some contain milk / eggs. We used our homemade vegan Italian bread crumbs but also love Edward & Sons brand! You want to use very fine breadcrumbs, so avoid panko if you can. If your bread crumbs are a little chunkier, pulse them in the food processor a few times before using them!

Tapioca starch or cornstarch – I find tapioca starch adheres better than cornstarch, but the latter will work in a pinch.

Unsweetened plain non-dairy milk – It is crucial you use an unsweetened and neutral-tasting plant-based milk here so the wings don’t taste weird. We love the unsweetened line of plant milks from Elmhurst.

Apple cider vinegar – We’ll use this to make a vegan buttermilk in the breading.

For the vegan lemon pepper sauce:

Vegan butter – Use your favorite brand of plant-based butter. We love the Plant Butter sticks from Country Crock!

Lemon – You’ll use both the juice and zest.

Spice Cabinet: lemon pepper seasoning, garlic powder, sea salt

How to Make Crispy Lemon Tofu Wings

Follow these time-tested, step by step instructions to get the best results from your tofu wings. And make sure you start 1-3 days ahead!

Step 1: Prep The Tofu 1-3 Days Ahead (at least!)

Place the whole container (do not open it) in the freezer overnight. In the morning, remove it from the freezer and set it in a shallow dish on your counter to thaw. This will take several hours. 

If you need to thaw the tofu quicker than that, check out this video for our best tips.

When the tofu is thawed, squeeze it gently over the sink and press it with a tofu press or on paper towels to remove any excess liquid.

Step 2: Marinate the Tofu

Place your tofu on a cutting board and use your hands to gently rip wing-shaped pieces. (Alternatively, you can also slice the tofu into sticks, triangles, or flat rectangles for other shape options.) Just be careful not to make any of the pieces too thick or they won’t cook right.

Mix all the ingredients for the marinade and pour this over your tofu wings, making sure they are all nice and coated. 

Place the marinated tofu in your fridge for at least an hour or overnight.

Step 3: Set up the Breading Station

Remove the tofu from the marinade and place it on a plate or cutting board. 

To the container where the tofu was marinating, add the unsweetened milk and apple cider vinegar. Swish the mixture gently to combine. 

Then, get out two more shallow bowls or pie plates. To one, add the starch. To the other, add the seasoned breadcrumbs. 

Step 4: Bread the Tofu Wings

Dip each tofu wing in the starch, then in the marinade/plant milk mix, then in the bread crumb mixture.

Be sure to coat the tofu completely during each phase. Repeat for each wing.

Step 5: Air Fry the Vegan Wings 

Add tofu wings to the air fryer basket. Be careful not to overcrowd them so that they’re on top of each other. Feel free to do this in 2 batches.

Air fry for 10 minutes at 350F. Stop to shake gently, just enough to loosen the pieces from the bottom of the basket, and air fry another 10 minutes. Then, stop to shake gently again and air fry for a final 10 minutes or until browned.

Step 6: Make Lemon Pepper Wing Sauce 

While the tofu is air frying, add the sauce ingredients to a saucepan and stir until the vegan butter is melted.

Then, let this come to a low simmer and as soon as the sides start to bubble, remove from heat.

Step 7: Bring it Together

Add the cooked tofu wings to a large mixing bowl and drizzle on half the lemon pepper wing sauce. 

Toss to coat all the wings evenly. 

Then, drizzle the remaining wing sauce over the tofu and continue tossing to coat.

Tips & Tricks for the Best Air Fryer Tofu Wings

  • Make sure you don’t skip the freezing the tofu part. This is crucial, and without it you will have a far squishier texture. 
  • When freezing the tofu, make sure you buy tofu packed in water and freeze it in the unopened package.
  • Do not use silken tofu or soft tofu. Extra firm tofu works the best for the meatiest results.
  • Use a plain, unsweetened plant based milk to avoid any overwhelming flavor. Avoid anything that says “vanilla.”
  • To get really firm and crispy wings, bread and air fry them the night before the big game. Then, let them sit in the fridge overnight and reheat in the air fryer before saucing and serving! 

How to Serve Lemon Pepper Tofu Wings

Serve these lemon pepper wings with carrot and celery sticks and Vegan Buttermilk Ranch Dressing for dipping those delicious lemon pepper tofu bites.

These crispy lemon tofu pieces also make an amazing dinner option paired with some white rice and sauteed veg. We love to throw leftovers into containers for meal prep with some veggies and dip on the side!

How to Store Leftover Vegetarian Wings

Allow the wings to cool completely before storing. Place leftover wings in an airtight container and eat within 4-5 days.

Creamy, comforting, and delicious, it’s everything you love about baked mac and cheese but vegan, and with loads of crushed Spicy Sweet Chili Doritos in every creamy bite. This Vegan Sweet Chili Doritos Macaroni and Cheese is going to change the way you think about vegan mac and cheeses. 

It’s creamy (and stays creamy!), comforting, and completely delicious. The combination of mac and cheese and Doritos is a classic food combo that was born to happen.

We took a pan of this to my cousin’s baby shower last year, and ALL the guests, from age 5 to 85, raved about it! These are people who’ve never eaten vegan mac in their lives, so I considered it a major win

The pan was gone in seconds which was, first of all, relieving because you know the nerves you get when you bring a vegan dish to any family party.

But it was also a very clear sign that I needed to share this recipe with the world because every vegan needs this one in their back pocket for that family party confidence!

Our tofu cheese sauce makes this the creamiest mac and cheese, and not one cashew is needed. Serve this delicious dish on its own, pair it with some soup or salad, or serve it as a side dish with one of our suggestions below. Perfect for parties, potlucks, or quiet evenings at home.

Ingredients for Doritos Baked Mac and Cheese

Pasta/Macaroni – We like elbow macaroni or small shells. Most commercial pasta brands in the US are vegan-freindly, but feel free to check out our Vegan Pasta List for more info!

Vegan cheddar shreds – We like Vevan or Daiya shreds for this recipe. I try to avoid a higher heat cheese like Violife because I find it’s tough to get that melt on top with a home oven.

Spicy Sweet Chili Doritos – Crushed. See the section below for more on vegan Doritos varieties throughout the world.

Firm tofu – Be sure to use firm and not extra firm tofu or soft.

Non-dairy milk – Plain and unsweetened, that’s important! We like Elmhurst’s unsweetened cashew milk.

Refined coconut oil – This is important: Make sure the coconut oil you use is “refined” coconut oil, so it doesn’t taste like coconut. If it says “unrefined” or “virgin” on the bottle, do not use it.

White miso – We love using Miso Master brand miso in our recipes.

Yellow mustard – This adds another level of tangy cheddar flavor.

Apple cider vinegar – You can sub white vinegar if needed.

Spice Cabinet: salt, onion powder

How to Make Spicy Sweet Chili Doritos Mac and Cheese

Step 1 – Cook Your Pasta

Use the lowest number they give on the package instructions in the time range to cook the pasta just below al dente. The pasta will continue to cook in the oven.

Step 2 – Make the Tofu Cheese Sauce

Add all the ingredients for the tofu cheese sauce to a high-powered blender or food processor. 

Blend the mixture, starting at a low speed and slowly increasing to high (use your tamper if needed), for at least 4-6 minutes. 

When ready, the sauce mixture will go from gritty and matte to smooth and shiny. That part is the key!

Step 3 – Bake Your Mac n Cheese

Preheat your oven to 325°F and combine the sauce and pasta in your baking dish. 

Top the sauced pasta with an extra cup of vegan cheddar, cover tightly with aluminum foil. and bake in the preheated oven for 15 minutes.

Sprinkle the baked mac with extra Sweet Chili Doritos and serve immediately!

Recipe Notes and Tips

  • Make sure you use a coconut oil that’s labeled “refined” so you do not get a coconut flavor.
  • Do not use silken tofu. Soft or silken tofu will create a much looser sauce, and the sauce is creamy enough!
  • Use any plant milk you like (soy, almond, oat, etc.), but make sure you use something with as neutral a flavor as possible. We love the unsweetened line of plant milks from Elmhurst.
  • Blend the sauce until absolutely, completely. smooth. You want to fully emulsify the tofu and coconut oil, so blending can take up to 6 minutes. You’ll know it’s ready when the mix goes from gritty and matte to smooth and shiny. 
  • Make sure you use a high-power blender for best results and lean on your tamper to help you get things going. We’ve used our Vitamix plenty of times for this recipe, but our Salton Power Blender works just as well for a far more reasonable price!
  • Serve the baked mac and cheese on a heat source like the Salton XL Hotray Warming Tray. Keeping the mac and cheese hot helps keep that sauce nice and creamy!

What Doritos are Vegan?

To my knowledge, the only vegan friendly Doritos in the US are the purple-bagged Spicy Sweet Chili Doritos used in this recipe.

Most Doritos have dairy in them, and a couple, including the Salsa Verde flavor in the green bag, contain chicken fat and aren’t even suitable for vegetarians.

There are a couple international flavors not available in the US that are suitable for vegans.

How to Serve Doritos Macaroni and Cheese

This amazing vegan macaroni and cheese recipe is a perfect meal all on its own or paired with some soup or salad.

We love it with our Vegan Tomato Soup or Vegetable Soup, or alongside a White Bean Toona Sandwich

This Doritos vegan macaroni and cheese also goes great as a side with our TVP Meatloaf or Buffalo Soy Curls.

How to Store Leftover Macaroni and Cheese

This Doritos vegan macaroni and cheese makes amazing leftovers. You can even make a big tray and save, and even freeze, some for later!

In the fridge: Let mac and cheese cool fully. Store in an air-tight container in the fridge for 5-7 days. 

In the freezer: You can freeze leftover tofu baked mac and cheese in an airtight container or freezer-safe bag for up to 2 months.

We like to freeze leftovers in our 2-Cup Souper Cubes and pop them out once frozen to store in a freezer-safe bag. This gives us the perfect 1 or 2-serving portion for a quick dinner.

You can also cook the cheesy pasta right in the 2-Cup Souper Cubes, but it would probably need less time.

How to Reheat Leftover Macaroni and Cheese

Reheat in a preheated oven, covered, at 350°F for about 10-15 minutes until hot. To maintain maximum creaminess, I like to add just a little plain, unsweetened non-dairy milk over the mac and cheese before covering.

If reheating in the microwave: Add a little unsweetened plain plant milk (I do a teaspoon or two per bowl) and reheat at 75-80% for 2-2.5 minutes until hot. Make sure you’re using plain, unsweetened, and neutral plant milk. We love the unsweetened line from Elmhurst.

To reheat from frozen: Defrost in the microwave on 50% for about 3-4 minutes until thawed. Add a little unsweetened, plain plant-based milk and reheat on high for 2-3 minutes until hot. For conventional ovens, place in an oven safe dish, add a little unsweetened plain plant milk, cover, and bake at 350° for 35-40 minutes.

And the best part? Soft tofu and silken tofu are a great way to replace cashews in many creamy vegan recipes! It’s a far more budget-friendly option, can be found in the refrigerated section of most grocery stores, and does not require an expensive blender to get right.

What is soft tofu?

Soft tofu, also known as silken tofu, is a high-water variety of tofu with a custard-like texture. 

The high water content and texture are the main difference between soft tofu and more common varieties in the US. Soft silken tofu is commonly used in Asian cuisines, particularly in Korean, Chinese, and Japanese dishes.

Is silken tofu the same as soft tofu?

Soft Tofu vs. Other Tofu Varieties

Understanding the differences between soft tofu and other types of tofu is essential to perfecting your tofu cooking game. 

Here’s a brief overview:

  • Silken Tofu: Silken tofu is not pressed, giving it a creamy and custard-like texture. It’s perfect for smoothies, desserts, and sauces. Though similar to soft tofu, it’s even more delicate.
  • Soft Tofu: Said to have a bit more body than silken tofu but still very tender. 
  • Firm and Extra-Firm Tofu: These types are denser and hold up well to frying, baking, grilling, and stir-frying. When shopping for soft tofu, consider the following tips:

  • Check the Expiration Date: Freshness is crucial with soft and silken tofu. Always check the expiration date on the package to ensure it’s as fresh as possible.
  • Inspect the Packaging: Ensure the package is intact, with no tears or damage. A compromised package can affect the tofu’s quality. Learn from my mistakes!
  • Type of Packaging: Soft tofu is often sold in tubs or vacuum-sealed packages. Tubs are submerged in water and need to be refrigerated, while vacuum-sealed packages can be shelf-stable and stored in a pantry until opened. I find that the vacuum-sealed packages usually provide the best creamy texture because there’s no added water, but either will work in our recipes.

Tips for Storing Soft Tofu

Once you’ve selected and purchased the silken or soft tofu, follow these storage tips to preserve its freshness:

  • Refrigerated Tofu: If your tofu came in a tub, keep it in the refrigerator. Once opened, make sure it’s covered with water. Change the water daily to keep it fresh. Use refrigerated tofu within a week of opening.
  • Shelf-Stable Tofu: Until opened, shelf-stable tofu can be stored in your pantry. After opening, you can transfer any leftovers to a clean container, cover it with water, and refrigerate. Like refrigerated tofu, change the water daily and use within a week.
  • Freezing Soft Tofu: I don’t often recommend freezing soft or silken tofu because it drastically changes the texture. For creamy sauces and dips, I wouldn’t freeze it…unless you don’t mind a cottage cheese type texture to your recipes. 

Tips for Using Leftover Tofu

If you find yourself with leftover soft tofu, here are a few creative ways to use it up:

  • Smoothies: Soft tofu adds creaminess and a protein boost to smoothies without altering the flavor. Blend it with fruits, leafy greens, and your choice of liquid for a protein-packed drink.
  • Creamy Salad Dressing: Puree soft tofu with herbs, spices, and a bit of lemon juice or vinegar to create a delicious, creamy salad dressing or sauce for dinner bowls!
  • Soups: Blend some up and add it to your favorite soup to bulk up the protein and creamy texture.

Here, we’ll answer some more of the common questions we get about silken and soft tofu! If you have additional questions, please leave them in the comments section, so we can make this a more complete resource for future readers.

Should soft tofu be cooked?

While soft tofu can be eaten raw, whether or not you should cook it really depends on the recipe you’re making. If it makes sense, cook it. If not, don’t.

How do you soften soft tofu?

Soft tofu is already soft in texture, but if you need it even softer for a particular recipe, you can gently press it between paper towels to remove excess liquid. Be careful not to press too hard though like you would with extra firm tofu.

Do you rinse soft tofu?

Rinsing soft tofu is optional and depends on the recipe. If you’re using it in a dish where you want to maintain its soft texture, such as in a dessert, you may choose not to rinse it.

Can you freeze soft tofu?

Yes, you can freeze soft tofu to extend its shelf life. However, freezing will change its silky texture, making it firmer and more crumbly. Almost like cottage cheese. You may have a harder time blending it into a creamy sauce at this point, unless you’re using a high-powered blender. We are experimenting with more frozen soft tofu recipes, so stay tuned!

T and I have started our own Super Bowl tradition recently: Our annual tofu wing platter!

Every year, whether we’re spending it with friends or just the two of us, I batch prep and make a ridiculous amount of these vegan wings with various dipping sauces. It’s become something so fun that we look forward to every year!

Vegan Tofu Wings Ingredients

You’ll need just 8 simple ingredients to make these air fryer tofu wings.

  • Extra-firm tofu – Frozen in the package, defrosted, and pressed. We call this the tofu freezer trick, and it is an absolute necessity for that chickeny texture. Don’t skip this step!
  • Olive oil – An oil-based marinade is going to infuse flavor without adding water to the tofu and creates this beautiful fried technique without dousing it in a vat of hot oil.
  • Vegan chicken bouillon powder – We always use our homemade vegan bouillon powder!
  • Seasoned bread crumbs – Make sure you check the ingredients, as not all brands are vegan. You can also make your own breadcrumbs using our homemade Italian bread crumb recipe!
  • Tapioca starch – We find that tapioca starch works best, but you can also use  cornstarch.
  • Plain unsweetened non-dairy milk – It is crucial you use a non-dairy milk that is plain, unsweetened, and as neutral-tasting as possible. Soy milk, almond milk, any will work! We love the unsweetened line of milks from Elmhurst. Look for something with as few ingredients as possible to ensure best results.
  • Apple cider vinegar – This will turn the non-dairy milk into vegan buttermilk for our breading!
  • Vegan wing sauce of choice – See the section below for our ideas!

Wing Sauce Options

The great thing about this recipe is you can switch up the sauces to make different versions. Wing sauce recipes are often easily veganized using vegan butter, so you can really have fun with this part! 

Note: You’ll be making 1 lb of tofu wings per tofu block you use, so make sure you adjust the wing sauce you’re using for 1 lb of chicken wings.

Substitution Options for Tofu Wings (air fryer)

If you need to substitute an ingredient in this recipe, here are our best tips. 

For the extra firm tofu: Depending on the brand, you may be able to use firm tofu for this recipe. Super firm tofu could also work, although the texture will be different since those varieties often come vacuum-sealed rather than in water.

For the olive oil: Avocado oil, sunflower oil, and walnut oil are all great alternative options. We do not recommend making these oil-free, as it severely affects the texture. If you’d like to try it, we suggest cutting the oil amount in half and replacing it with water or vegetable broth. If you go this oil-free route, you will also have to extend the cooking time by at least 10-15 minutes.

For the bouillon powder: You can use half as much bouillon paste or ground-up bouillon cubes.

For the bread crumbs: Feel free to use gluten-free breadcrumbs or homemade breadcrumbs. I would avoid panko bread crumbs for this particular recipe. We find panko breadcrumbs do not brown well in this recipe. I’ve also seen people use crunchy ground-up chickpeas as bread crumbs but haven’t tried it yet myself.

For the tapioca starch: Cornstarch also works (but the breading doesn’t stick as well in our experience).

To replace the non-dairy milk: In a pinch, you can use a little warm water to replace the non-dairy milk. 

For the apple cider vinegar: White vinegar, rice vinegar, or white wine vinegar can be used in a pinch!

How to Make Crispy Air Fryer Tofu Wings

These vegan air fryer chicken wings take a bit of planning in advance, but the actual process of making them is simple enough for first time tofu cooks!

Step 1: Prep your tofu.

First, freeze and defrost your tofu. Place the whole container (do not open it) in the freezer overnight. 

In the morning, when your tofu is fully frozen, remove it from the freezer and set it in a shallow dish on your counter to thaw. 

This will take several hours. When the tofu is thawed, squeeze it gently over the sink and press the excess water out with a tofu press or on paper towels with a heavy object on top to remove any excess liquid.

This is called our Tofu Freezer Trick, and we have an entire guide on it here on the blog! If you’re new to freezing tofu, this may help you understand more of the hows and whys.

Step 2: Marinate the tofu wings

Next, place your tofu on a cutting board and then use your hands to gently rip wing-shaped pieces off of it. Alternatively, you can also slice the tofu into sticks, triangles, or flat rectangles for other shape options. 

Mix all the ingredients for the marinade and pour this over your tofu wings, making sure they are all nice and coated. Place them in your fridge for at least an hour or overnight.

Step 3: Bread the tofu wings.

Now, it’s time to set up the breading station! 

When they’re finished marinating, remove the tofu pieces from the marinade and place them on a plate or cutting board or the lid of the container.

To the container where the tofu was marinating, add the non-dairy milk and apple cider vinegar. Swish the mixture gently to combine. 

Tip: If your tofu marinade is very thick at this point, swirl in a splash of hot water before adding the non-dairy milk and vinegar.

Then, get out two shallow bowls or pie plates. To one, add the starch. And to the other, add the breadcrumbs.

Once your breading station is set up, you’re ready to bread the tofu!

Dip each piece of tofu in the starch, then in the marinade/plant milk mix, then in the bread crumb mixture. Be sure to coat the tofu completely during each phase. Repeat for each wing!

Step 4: How to Air Fry Tofu Wings

Finally, add tofu wings to your air fryer basket, enough to fill a single layer on the bottom but not so many that they’re on top of each other. We find we can comfortably fit 1 block of tofu in our Salton Flip and Cook thanks to its rectangular shape. 

Air fry for 30 minutes at 350F, stopping to shake the jar gently every 10-15 minutes. When shaking the air fryer jar, you want to do this gently, just enough to loosen the pieces from the bottom. The tofu wings will be beautifully golden brown when ready!

Step 5: Sauce your plant-based wings!

Once your tofu wings are cooked, it’s time for the fun part!

Start by first adding the cooked tofu wings to a large mixing bowl and drizzling on half your sauce of choice. Toss to coat all the wings evenly. 

Then, drizzle the remaining sauce over the tofu and continue tossing to coat.

The Best Air Fryer for Tofu

We air fry a lot of tofu in this house, and we’ve tried a lot of air fryers. If I’m being honest, we’ve never *loved* any of them…but then we tried the 3-in-1 Flip and Cook from Salton!

We’ve been using this air fryer for almost 1 year, so we’ve been through a lot together. And I feel confident in saying it is the best air fryer we’ve ever used.

Why We Love It:

  • Absolutely beautiful. The sleek design and gorgeous glass jar make me feel like royalty when I walk into my kitchen each morning. I know aesthetics alone do not make a good kitchen appliance, but do not underestimate just how pretty this is.
  • Not only is it pretty, but it’s also functional! The borosilicate glass air fryer jar (“basket”) lets you actually see your food while it cooks. This is so important for cooking tofu in particular because it can brown up quickly!
  • No weird plastic smell like you get with other air fryers (No description necessary. Let’s just say, IYKYK.) The glass jar is ‘forever-chemicals’ free and includes a bonus frying rack that is also safe from non-stick coatings!
  • Dehydrator capability. How cool is this?! This machine has a dehydrator setting allowing you to dehydrate herbs, fruits, even vegan jerky! (Stay tuned for more on that last one!)
  • More room. We find the rectangular jar (4.9 quart) shape lets you fit more food into your air fryer without it taking up more room on our counter. A major win for small city kitchens like ours!
  • It turns into an indoor grill! This magical air fryer has a rotating base that flips 180 degrees, turning your air fryer into an indoor grill. Another win for small kitchens where you have to make hard decisions about what earns that space on your counter!
  • It can keep up with us. When we’re batch-cooking these wings for the Super Bowl, it’s important we have an air fryer that can keep up, and this one meets that challenge better than any other air fryer we’ve used!
  • Easily cleaned. The removable non-stick rack and wire rack make it easy to remove and clean in little time. Same with the glass jar basket! We’ve used other air fryers that just don’t feel like they ever get clean, but that’s not the case here.

How to Store Leftover Plant Based Wings

I love having tofu wing leftovers to portion into lunches with salads the rest of the week! Although, they’re so good you may want to download our batch cooking guide and make a triple batch!

In the fridge: Store leftover tofu wings in an airtight container in the fridge for up to 1 week.

In the freezer: Store leftover tofu wings in a freezer-safe bag or container for up to 3 months! You can freeze them either before or after you sauce them – up to you. Make sure you let the wings cool fully before freezing. If freezing with the sauce on, you may need to freeze on a baking sheet before transferring to a freezer-safe bag to keep them from sticking together in one big clump.

Reheat: We recommend reheating your tofu wings in the air fryer at 400F for 10-15 minutes for optimum crispiness! The sauce will soak into the breading when stored, so if you want a saucier wing, just toss them in a little extra sauce after reheating in the air fryer.

There are so many reasons to love this easy pasta recipe, but here are our top 3:

  • Made with silken tofu, not cashew cream. This makes the recipe much more budget-friendly and good for those with nut allergies!
  • It’s an easy recipe to make. Saute some spinach, blend up a sauce, and bring it all together!
  • The best flavor. Subtle, fresh, and zingy is the best word I can think of to describe it. With a good sting of garlic and zest of lemon thrown in for good measure. This is a flavor the whole family will love!

Ingredients for Easy Creamy Vegan Pasta

You’ll need just 8 simple ingredients + spices to make this easy creamy lemony pasta! 

We’ll go over some ingredient notes here to ensure you get the best results, but you can find the detailed recipe with ingredient amounts in the recipe card at the bottom of this post.

  • Fettuccine noodles + some of the reserved water
  • Olive oil
  • Fresh spinach – de-stemmed and chopped
  • Garlic cloves – minced
  • Silken tofu
  • Dry white wine or white wine vinegar – for sauteing the spinach. I like to use an Italian pinot grigio both in and with this recipe.
  • Lemon juice – fresh is best, but bottled will work too!
  • White miso paste – This adds a tangy zip, almost like parmesan.
  • Spice Cabinet: onion powder, salt, white pepper

Substitution Options for Creamy Spinach Sauce Pasta

If you need a substitute for the ingredients above, here are our best tips. But remember, substituting any ingredient can cause a not-always-pleasant final result. Let us know if you try any substitutions and how they work out for you in the comments below!

For the fettuccine: Feel free to sub your favorite pasta shape here. Any type of pasta would work. I especially think penne would be great!

For the silken tofu: You can use soft tofu as a 1:1 sub. You can probably also use raw cashews to make a similar sauce, but you would need to add more liquid to the recipe and use a high-powered blender or food processor. Coconut milk may be a decent sub, but you would need to thicken it or cook it down considerably. This would also affect the cooking time.

For the olive oil: We use this to saute the spinach. Feel free to omit it and saute the spinach in vegetable broth if you are oil-free. You can also use a different oil like avocado oil or sunflower oil.

For the spinach: Feel free to use your favorite greens here like kale! Baby spinach is fine too. You can also go another route and try adding some cherry tomatoes or artichokes to create a vegan spinach artichoke pasta!

For the wine: Instead of white wine, you can use white wine vinegar or just white vinegar.

For the miso paste: You can sub chickpea miso 1:1 or try something like sauerkraut brine to get a similar fermented flavor. More white wine or some vegan parmesan cheese will also work. Nutritional yeast can be added to the sauce but is not a 1 for 1 sub for miso paste.

How to Make Creamy Vegan Lemon Pasta with Spinach

You’re going to love how easy it is to make this spinach pasta recipe!

Step 1: Cook the pasta.

Get a large pot of salted water boiling and cook the pasta according to package directions, reserving 1/3 cup of the pasta cooking water for the sauce.

Step 2: Make the creamy sauce.

While the pasta cooks, make your sauce by adding all the ingredients to a small blender or food processor and blending until smooth. Cover and set this in the fridge until ready to use.

Step 3: Saute the spinach.

Heat the olive oil in a medium saute pan on medium heat. Add the garlic and cook for 2-3 minutes. Add the spinach and stir to coat. Cook for 1-2 minutes or until spinach is slightly wilted.

Step 4: Assemble the dish

Toss the sauce with the drained pasta and 1/3 cup reserved pasta water. Then, stir in the spinach. Cover and heat on low stirring often until warmed through and the sauce has reached your desired thickness.

How to Serve This Healthy Spinach Pasta Recipe

Serve this vegan spinach pasta hot with vegan crab cakes, soy curl chicken, vegan chicken cutlets, or pesto tofu

It’s also wonderful with a side of vegan garlic bread or cheesy vegan breadsticks and topped with freshly cracked black pepper, red pepper flakes, or pine nuts.

If you’re looking for a lighter option, serve it with a side salad like our Copycat Olive Garden Salad or Vegan Caesar Salad! The vegan caesar also uses silken tofu, so you can use the rest of the block you have and make a half-batch perfect for lunch!

How to Store Leftover Creamy Spinach Pasta

Store leftover pasta in the fridge in an airtight container for up to 5 days.

Reheat leftover pasta in the microwave at 80% heat for 2-4 minutes, stopping to stir and check the heat every 1-2 minutes until warmed through.

I have no problem replicating the flavor of chicken. That’s what our vegan bouillon powder is for!

But beef is a whole other story. How was I ever going to achieve that deep umami flavor in a way that hit all the right spots as the original?

Well, I’m happy to say that after much experimentation and research, I finally have a tofu beef recipe worth sharing with you! 

You won’t believe the meaty texture and flavors you can get following this method. I’ve tested it in myriad scenarios (more on that later), and it’s been a winner every. single. time.

Tofu Ground Beef Recipe Ingredients

If you’ve ever wondered “How do you add meat flavor to tofu?”, this recipe for vegan tofu crumbles will answer all your questions. I did a lot of flavor research for this recipe, and this is the best combo of ingredients I found!

(Reminder: We’ll go over the ingredients with some notes to achieve the best results here, but the full recipe with ingredient amounts can be found in the recipe card at the bottom of this post!)

Here’s what you’ll need:

  • Extra firm tofu – You can press out the excess water from your block of tofu if you want, but I found the cooking time doesn’t change much either way. So, I prefer to just pop it straight in the pan!
  • Extra virgin olive oil – Tofu is completely fat-free, so a decent amount of olive oil helps add that fatty texture and flavor!
  • Vegan Worcestershire sauce – This is optional.
  • Red miso paste – This is the most game-changing ingredient for making tofu taste like beef, so don’t skip this! It adds a deep caramelized meat flavor you have to taste to believe!
  • Tomato paste – This ingredient can be adjusted based on how you’re using the vegan ground beef. Check out the section below for our ideas!
  • Mushroom powder – This adds an incredible savory flavor!
  • Beet powder – This is optional and adds that beautiful red color!
  • Spice Cabinet: onion powder, garlic powder, paprika, chili powder, and black pepper

Substitution Options for This Ground Tofu Recipe

This recipe is super versatile and can be used in a variety of ways! Here are our best substitution tips and variations for you.

For the tomato paste: This is the ingredient you can really have some fun with and swap it out for whatever you’re using the vegan beef for. You can sub tomato sauce, salsa, enchilada sauce, or pizza sauce! A curry sauce could also give a fun twist. And gochujang can create a great Korean ground beef tofu recipe.

For the tofu: I have not tried this with a soy-free tofu like chickpea tofu or hemp tofu, but if you do please let me know in the comments! If you’re looking for a TVP-based vegan beef recipe, check out our TVP Beef Recipe. Do not use silken or soft tofu for this recipe.

For the olive oil: You can sub avocado oil, refined coconut oil, or sunflower oil for this recipe. You can also use sesame oil if you’re making this for a stir fry. If you’re oil-free, you can skip the oil but this will yield different results in the flavor and texture of your final product.

For the beet powder: You can skip this or sub 1/2 – 1 Tbsp beet juice or beet puree.

For the vegan worcestershire: Sub more tomato paste or use any of the tomato paste subs listed above! You can also sub more red miso, browning sauce, liquid smoke, essential amino acids, or soy sauce.

For the spices: Feel free to play around with the spices based on what you have on-hand and the flavor vibe you’re going for.

How to Make Tofu Taste Like Beef

The key to making tofu taste like beef is to cook it low and slow to really get the water out and let those seasonings and other flavoring ingredients seep into every pore of the tofu. 

It may sound fancy, but the cooking process is so incredibly simple!

Step 1: Combine the ingredients.

Heat the olive oil in a large non-stick skillet on medium heat.

Use clean dry hands to crumble the extra-firm tofu into the large frying pan. Use a potato masher if needed to really break down those larger chunks into small pieces.

Add the rest of the ingredients. Stir everything together and use your spoon or rubber spatula to break up the larger chunks of tofu. You want everything to be a very ground meat texture.

Step 2: Cook the tofu beef.

Continue to stir until everything is well-incorporated.

Cook on medium heat (or medium-low if you notice the tofu becoming too crisp too fast) for 40-60 minutes, stirring every 5-10 minutes. 

You want to cook the water out of the tofu slowly so the outside doesn’t burn before the inside is nice and meaty.

How to Use This Vegan Ground Beef Recipe

In this post, we’re sharing our absolute go-to method for a basic air fryer tofu that can be used in a variety of dishes from stir fry to salads and wraps to a healthy grain and veggie bowl. You’ll need just a few common ingredients, and, unlike other recipes, this one is completely oil-free!

We swear by our game-changing tofu freezer trick, but sometimes you don’t have time to freeze and marinate tofu. You need it now!

In these moments, I turn to our air fryer. 

Air frying tofu is the quickest, easiest way to make deliciously crispy on the outside and meaty on the inside tofu!

It’s a beginner tofu cook’s dream. And you don’t even need oil most of the time!

If you’ve had trouble cooking tofu before, I highly recommend you give this air fryer method a try. I’ve been vegan for almost 10 years and vegetarian for years before that. I’ve made a LOT of bad tofu, so I know the struggle. This method is your redemption!

Why is this the best air fryer tofu?

  • Our simple method is an easy way to add healthy plant-based protein to any dish.
  • It’s easily adapted to suit whatever flavor/vibe you’re going for!
  • We use super common ingredients – nothing fancy!

Easy Air Fryer Tofu Ingredients

You only need 4 common ingredients to make this simple recipe! We’ll go over some ingredient details here, but you can find the full recipe with ingredient amounts in the recipe card at the bottom of this post!

  • Extra firm tofu – Cubed. For best results, press tofu before cubing.
  • Cornstarch  – See below for corn starch substitutions
  • Vegan chicken bouillon powder – We use our homemade vegan bouillon powder, but you can use any seasoning of choice!
  • Soy sauce – Optional, to add a little salty/savory flavor. Whether or not you’ll need this will depend on which seasoning you’re using. And if you’re coating the tofu in a sauce with big flavor, you may not need it. If I’m serving the recipe as-written, I use it.

You’ll also need an air fryer. We have been using (and LOVING) our Flip and Fry Air Fryer from Salton. Not only is it effective, but it’s also super pretty!

How to Air Fry Tofu Without Cornstarch

You can easily make air fryer tofu without cornstarch! Simply sub another starch like arrowroot starch or tapioca starch. You can also follow our recipe for Air Fryer Sriracha Tofu for a completely starch-free method.

Substitution Options

If you need an ingredient substitution, here are our best recommendations! Please remember, subbing an ingredient in any recipe may not always lead to an optimal result. Let us know if you try any of these (or other subs) in the comments!

For the extra firm tofu: Some varieties of Firm tofu (especially those found outside the US) will work fine with this recipe! Stay away from soft tofu and silken tofu of all kinds. This is not the recipe for that! We have not tried this with chickpea tofu or other non-soy tofus.

For the bouillon powder: Feel free to sub your favorite seasoning here depending on what you’re using the tofu for. Ranch seasoning or chili seasoning could be an interesting twist. Our Cheesy Garlic Blend could also be fun! If you still want that chickeny vibe, you can do ½ chicken seasoning ½ seasoning of choice. You can also just use a mix of whatever spices you have in your cabinet like garlic powder, black pepper, and onion powder. Have fun with this part!

For the soy sauce: You can sub tamari, liquid aminos, or a low-sodium soy sauce to reduce the sodium if needed. Vegan worcestershire or sesame oil can also be used for a slightly different, beefier vibe. You can also add something like hot sauce or red miso broth!

How to Make This Crispy Air Fryer Tofu Recipe

This easy recipe may just be the simplest thing you’ve ever made in the air fryer! It’s a method we keep in our back pocket for busy work night dinners.

  1. In a small bowl, mix together the cornstarch and bouillon powder with a small whisk or fork. Press and cube your block of tofu to remove excess moisture.
  2. Add the pressed and cubed tofu to a large mixing bowl. Sprinkle on the cornstarch/bouillon mix and drizzle on the soy sauce. Use a rubber spatula to gently toss everything together until evenly coated.
  3. Add to your air fryer basket (ideally, in a single layer). Air fry at 370 degrees f for 25-30 minutes, stopping to shake the basket to detach them from the bottom every 5-10 minutes until they’re golden brown.

How to Serve Vegan Air Fryer Tofu

Serve immediately over rice or veggies. You can serve this tofu on its own or tossed in your favorite sauce like peanut sauce, coconut curry sauce, or even pesto

You can also serve them like tofu nuggets for lunch or a snack alongside a dipping sauce like ranch, teriyaki sauce, pesto, or hot sauce!

How to Store Leftover Tofu

You can store these crispy tofu cubes in the fridge in an airtight container for up to 7 days.

I haven’t tried freezing this tofu after it’s cooked yet. It would probably work, but the tofu texture would change slightly, and you could risk it being too crumbly. Not that that would make it inedible though, so it’s worth a try!

FAQs About Quick Air Fryer Tofu

Do I need a tofu press?

You do not need a tofu press to make tofu in the air fryer, but it can help! Personally, we do not use a tofu press. We just place our tofu on one of those roasting pans with a paper towels on top. Then, we place a small cutting board on top with a heavy tile on top of that. 

You can also use a large book (one if fine, don’t pile them up). You just want a heavy object to create consistent weight on the tofu to gently press out the excess water without breaking it. We let it sit like this for 15-30 minutes before air frying!

Why is my tofu not crispy air fryer?

Your air fryer tofu may not be crispy because you’re cooking it at the wrong time/texture. We like to cook tofu at 375F for 25-30 minutes, stopping to shake the basket every 5-10 minutes. 

For extra crispiness, you can try tossing the tofu in cornstarch and/or spraying the air fryer basket lightly with oil. You can also marinade the tofu in an olive oil based tofu marinade for 1-24 hours before air frying.

Can I put tofu in the air fryer?

Yes, you can definitely put tofu in the air fryer! In fact, the air fryer is our favorite way to cook tofu quickly because it’s easy and creates the best texture!

Can you use flour instead of cornstarch for tofu?

Yes, you can use all-purpose flour instead of cornstarch for tofu. White rice flour works too, or try other starches like potato starch, arrowroot starch, or tapioca starch!

How do you keep tofu from sticking to air fryer?

To keep tofu from sticking to air fryer, you can try spraying your air fryer basket with a little oil before adding the tofu or use air fryer specific parchment liners!

Feel free to sub your favorite seasoning here depending on what you’re using the tofu for. Ranch seasoning or chili seasoning could be an interesting twist. Our Cheesy Garlic Blend could also be fun! If you still want that chickeny vibe, you can do ½ chicken seasoning ½ seasoning of choice. You can also just use a mix of whatever spices you have in your cabinet like garlic powder, black pepper, and onion powder. Have fun with this part!
*Soy Sauce Notes:
  • Whether or not you’ll need this will depend on which seasoning you’re using. And if you’re coating the tofu in a sauce with big flavor, you may not need it. If I’m serving the recipe as-written, I use it.
  • You can sub tamari, liquid aminos, or a low-sodium soy sauce to reduce the sodium if needed. Vegan worcestershire or sesame oil can also be used for a slightly different, beefier vibe. You can also add something like hot sauce or red miso broth!
Cornstarch Substitutes:
You can easily make air fryer tofu without cornstarch! Simply sub another starch like arrowroot starch or tapioca starch. You can also follow our recipe for Air Fryer Sriracha Tofu for a completely starch-free method.

They say the sign of true personal growth is letting yourself change your mind when presented with new information. Well, I’ve hated fruit in savory dishes pretty much my whole life. I never understood the purpose of fruit taking up space on a perfectly good cheese plate! 

But when we made these easy cashew cheese and strawberry sandwiches last year, it was precisely what I needed to change my whole perspective on the subject.

When we recently made our vegan goat cheese substitute, I knew it would be perfect for matching with fresh summer fruit. And so I happily present to you these vegan goat cheese, blueberry, and basil sandwiches. 

This vegan sandwich recipe is so simple to make, but they carry an air of fanciness as well. And they are absolutely delicious! They’d also be great in crostini or flatbread form, but that’s another recipe for another day.

Why We Love These Vegan Picnic Sandwiches

Ingredients You’ll Need for Blueberry Basil Sandwich

You’ll need just 4 ingredients to make this fun vegetarian and vegan sandwich recipe!

  • Ciabatta rolls – Always check the ingredients when buying rolls like this to make sure the brand you’re buying is vegan-friendly!
  • Vegan goat cheese – We used our homemade vegan goat cheese substitute for this recipe, but there are quite a few store-bought versions too. Look for vegan goat cheese from brands like Spero and Treeline. We’ve tried and loved both of them! 
  • Fresh blueberries
  • Fresh basil – Minced. Italian basil will work for this recipe, but if you can find lemon basil, that takes this classy vegan sandwich to a whole different level!

Substitution Options

If you don’t have or can’t tolerate any of the above ingredients, here are our best substitution tips. Keep in mind: Substituting any of the ingredients may lead to a variable degree of difference in the final product. Let us know in the comments if you try any subs and how they work out for you! 

For the ciabatta: Baguettes, rustic style bread, or long rolls will all work great with this. Something hearty but with a little softness to it as well. That’s what you’re aiming for.

For the vegan goat cheese: Any soft spreadable and mild-flavored vegan cheese would work for this recipe. Your favorite brand of vegan cream cheese can also work too! If you’re looking for homemade solutions, try our Herbed Cashew Cheese, Vegan Veggie Cream Cheese, or Vegan Whipped Feta.

For the blueberries: Other berries like strawberries or blackberries could work. Even a combination of the three would be wonderfully refreshing!!

For the fresh basil: Mint (especially lemon mint), lemon balm, lemon thyme, or even regular thyme could also work nicely.

How to Make Creamy Vegan Cheese and Blueberry Sandwiches

Like I said earlier, these sandwiches are sillily easy to make! You’ll be ready to eat in well under 10 minutes!

Step 1: Prep the ingredients.

If necessary, start by slicing the rolls in half. Then, gather the rest of your ingredients and mince the fresh basil.

Step 2: Assemble the vegan sandwiches.

Next, spread a thick layer of vegan goat cheese on each side of the roll. Top that with a layer of blueberries and a sprinkle of freshly minced basil. 

We put general amounts in the recipe card, but feel free to use more or less of any of the sandwich fillings depending on your taste! 

Bring the two halves of the roll together to form the sandwich. That’s it! Easy, right?!

How to Serve Vegan Ciabatta Sandwiches

Serve these cold sandwiches immediately alongside a big mixed greens salad with more fresh blueberries and a balsamic vinaigrette! I also think they’d be great for a shower or vegan afternoon tea.

Make-Ahead Option: You can also wrap blueberry basil sandwiches to pack and enjoy as part of a picnic, but I would store them wrapped in the fridge until you are ready to leave. I wouldn’t leave them outside the fridge for more than about 1 hour or the vegan goat cheese might get too soft.

How to Store Leftovers

Storing leftovers separately and not assembled is always best for something like this. 

If you prefer to store the sandwiches pre-assembled, they should stay good in an airtight container in the fridge for 2-3 days.

We do not recommend freezing leftover sandwiches.

And in utilizing our simple tofu cheese method, we can create a dairy free goat’s cheese without having to deal with the complicated process of culturing or fermenting at home. Dairy free goat cheese is very hot right now. At Natural Products Expo East last year, we were able to try 2 vegan goat cheeses from brands like Treeline and Spero which were so, so good!

Tasting their delicious goat cheese substitutes got me excited to try and make my own at home!

This recipe is based on one of our other popular recipes, our vegan feta recipe.

But we switched up the flavoring ingredients to make it taste more like a traditional goat cheese. 

This dairy-free, tofu cheese is made with simple ingredients and requires very little time to make.

The result is a creamy cheese with a crumbly texture that tastes tangy and fresh. It’s ready to be sliced and spread on crostini, flatbread, crackers, and just licked off the spoon.

Why We Love This Dairy Free Goat Cheese

  • Uses tofu instead of cashews, making it a more cost-effective option than cashew nut cheese! In my opinion, tofu is also easier to work with than raw cashews because you don’t need to soak anything ahead of time. And no tofu press needed!
  • Spectacular flavor and texture. Tangy but smooth and fresh flavor. Soft and creamy texture. I really think we hit on something magical here!
  • Easy to make. Blend and let it set in the fridge overnight.
  • A great base for veganizing recipes that call for soft goat cheese.

Ingredients in Tofu Goat Cheese

You’ll need 2 ingredients for the base of this vegan goat cheese:

  • Extra firm tofu – This is regular extra firm tofu and not silken tofu. Just drain the water from the package. There’s not even any need to press it like you would when you’re making something like tofu scramble!
  • Refined coconut oil – Make sure you’re using coconut oil that’s labeled “refined” and NOT one labeled “unrefined” or “virgin”. Refined coconut oil has no flavor of smell.

You’ll need 8 ingredients to create the perfect flavor:

  • Lemon juice – Fresh or bottled, both work well!
  • Apple cider vinegar 
  • White miso paste – We love the mellow white miso paste from Miso Master. It’s our favorite miso for pretty much everything!
  • Extra virgin olive oil – Use something high-quality. We love Botticelli.
  • Fresh garlic 
  • Sea salt + ground black pepper 

And to thin things out, you’ll need:

  • Plain unsweetened non-dairy milk – It’s important you use as neutral-flavored milk as possible for this. Dairy substitutes like Chobani Zero Sugar oat milk, Elmhurst unsweetened cashew milk, and Califia unsweetened almond milk are three of our favorites.

Substitution Options for Vegan Goats Cheese

For the block of extra-firm tofu: Firm tofu or even medium firm can be used too but may yield a softer more spread-like texture. Stay away from soft or silken tofu.

For the refined coconut oil: I wouldn’t replace this because it’s key to the final texture. Coconut oil begins to firm up at temperatures below 75F which is what makes the cheese mixture firm up enough to slice and mold. Unfortunately, because of this, there is no oil-free sub for most of our tofu recipes. Vegetable shortening might work, but it’s not something we’ve tried before.

For the lemon juice: Lemon zest or lemon pepper seasoning may be used for a lemony flavor, but you would have to play with the amounts.

For the ACV: White vinegar, rice vinegar, or white wine vinegar will all work as a good substitute in this recipe. I don’t think balsamic or thicker red vinegars would work too well, and would alter the color.

For the miso paste: You can try subbing half as much sauerkraut brine for fermented flavor. You can also skip this and increase lemon juice + acv slightly.

For the olive oil: You can skip it entirely or replace it with more refined coconut oil. The fats help with the final texture, and the flavor adds savoriness.

For the non-dairy milk: You could sub non-dairy milk with silken tofu, unsweetened dairy free heavy cream (We like the non-dairy heavy cream from Silk), or unsweetened coconut cream (We like Native Forest.)

How to Make Plant Based Goat Cheese

This tofu cheese recipe is so easy to make. You can go the extra mile and turn it into one of those cute goat cheese logs for serving or leave it in its spreadable form!

Step 1 – Blend: You’ll start by adding all ingredients to your food processor and processing on a low speed for about 4-5 minutes, stopping to scrape the sides as needed.

The mixture will get really smooth and shiny towards the end which is what we want! If it’s grainy, keep blending until it’s a nice creamy consistency.

Step 2 – Set: Next, transfer this mixture to a large airtight container. If you want to mold this goat cheese once it’s set (like a cheese ball, log, or wheel, you can use a silicone cheese mold or just line the container you’re using with plastic or parchment paper, so you can easily lift the cheese out after it has set.

Cover and place it in the fridge for at least 3-5 hours to fully set. It will firm up to be a spreadable and sliceable texture.

Step 3 – Shaping (optional): To make this vegan goat cheese substitute look as legit as possible, you can also mold it into those classic cheese logs once it’s set. Just pop the cheese out of the silicone mold or lift it out of the plastic-lined container.

Then, use gloved hands to form the mixture into 2-4 tubes. Wrap these tubes in plastic and place them back in the fridge for at least another 60-90 minutes before serving. 

How to Use This Vegan Goat Cheese Recipe

When you’re ready, remove the cheese from the fridge and unwrap it or pull it out of the silicone mold as needed.

Serve as a spread with a cheese knife onto crostini, crackers, bread, cucumbers, or all your favorite veggies. It’s the best way to veganize all your favorite recipes that call for soft goat cheese!

How to Store Leftover Dairy Free Goat Cheese

In the fridge: Store leftover dairy free goat cheese in an airtight container in the fridge for up to 5-7 days. Use quickly for best results.

In the freezer: You can freeze this creamy vegan cheese in an airtight container for up to 8 weeks. To defrost, transfer only what you’ll need to the fridge until thawed through. This takes about 3-4 hours depending on the size of the serving you’re defrosting.

This vegan goat cheese recipe is made in your food processor and tastes as legit as the real thing! It’s the best substitute for soft goat cheese in all your favorite vegan recipes.
