I made this tonight and it was a total hit. Only had one package of Mori-nu extra firm silken tofu so held back on the nutritional yeast a bit (who knew it had so much protein!). Kids loved it and it was great alongside a kale salad. Will be repeating.

I made this a week ago. I had to sub tahini for the miso paste and cornstarch for the tapioca starch. The starches didn’t change much. The tahini gave it a bit of a tangy aftertaste. But I was pleasantly surprised. I couldn’t believe how much this tasted like mac and cheese and how good it is. My oldest who is lactose intolerant LOVED it. Mac and cheese is a favorite of theirs and they were so glad to be able to eat it without consequences. I was able to find miso paste at an oriental market about 20 minutes away and I’m looking forward to making it again!
