In reply to Merrymepenelope. Forgot to mention: I formed two seitan loaves, wrapped in foil then steamed 40 mins in the Instant Pot using the steam function. Perfect seitan! I did use a different au jus recipe but honestly, the seitan is so flavorful, it can stand alone as a regular lunch"meat" or even a roast adorned with sauteed mushroom and onion faux beef gravy, surrounded by roasted potatoes and carrots.

This is my new favorite, easiest seitan recipe ever! I doubled the garlic and added one tsp cayenne pepper to the seitan and the flavor is amazing! Of course a slathering of horseradish on the roll played a part. Thanks so much! Delish!
