I made this for the whole family tonight, vegan and non-vegan. It was a hit! I doubled the recipe, but kept the oil and jalapeno at the one recipe level. I felt like the sauce was a little thin with one avocado and I had an almost-too-ripe 2nd one available, so I threw it in. Then it was just right. I served it with your tequila lime baked tofu. Yum! And we have enough leftover for lunches tomorrow.
