This was really very good and all things considered, scratched the corned beef "itch" today for my long ago St. Patrick's day meals as a child, pre-vegan. I made this exactly as dictated. I agree with others that the smell was divine. It was a tiny bit sweet, however, from my meat eating days, I can recall that corned beef also had a subtle sweetness to it. The sweetness in this, from the beets, was mild and not overpowering. With some yellow mustard, this was spot on. Will a meat eater be fooled or like this? Im going to guess no, but if you are feeding a fellow vegan, who is familiar with seitan products, they will love it. The texture was really great and not as dense as other seitans- dont get thrown off by the texture when in the crock pot- felt like I had made a mistake with how soft it was... its firms up. Will I make this often? No. Was it easy? Yes. It will be a once a year thing for St. Patricks day. Thank you for the nostalgia
