We loved this recipe! It’s super flexible allowing you to adjust veggies as desired. The dressing is so good and quick to make. I sautéd yellow onion and orange bell pepper until slightly soft, added suggested ingredients, cooked until heated through, topped the hot pan with roughly chopped fresh spinach and allowed it to wilt. Tortillas were prepared per recipe (we did both regular and gluten free). I was not able to get my hands on dehydrated sun dried tomatoes so I used jarred and added a bit of the liquid from a jar of artichokes I happened to have had open in the fridge. (We didn’t use the artichokes for this recipe but that would be tasty too!) This reheated wonderfully in a skillet for leftovers on day 2! Thank you!!!
